Brekki Beet Spread
Surprise your kiddos with a wholesome, colorful and exciting Breakfast Beet Spread. This whimsical, easy and filling recipe is so versatile and can help bring calm to the morning chaos, especially back to school starting!

- 1 Food Processor
Ingredients
What You'll Need:
- Your kid’s favorite breakfast food ie: toasted bagel, bread or muffin
- Sprinkles of any kind!
Brekki Beet Spread Ingredients:
- 1 large or 3 small beets cooked (cooled), peeled and roughly chopped (I like this brand that’s ready to go)
- 1 Dragon Fruit peeled and roughly chopped or grab a pre-packed Dragonfruit Smoothie kit (frozen) Sub 1 cup strawberries/berries if dragon fruit is not available
- 1 ripe banana 2 if you are not doing the smoothie kit above
- 1 cup cream cheese softened
- 1/3 cup cottage cheese
- 2-3 tbsp honey to taste
Instructions
To Make the Spread:
- Grab that food processor!
- Add everything all at once and blend until smooth. Yup, that’s it!
- Spread this over your kiddo’s favorite breakfast food like toasted bagel or muffins, or eat with a spoon.
- Give it some fun flair with fun sprinkles of any kind and enjoy.
