Lemon Bar Blondies

Ingredients
  

For the Blondie Crust:

  • 1/2 cup unsalted butter softened
  • 3/4 cup packed light brown sugar
  • 1/4 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1 cup all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 cup white chocolate chips
  • 1 cup broken pretzels

For the Lemon Filling:

  • 1/2 cup granulated sugar
  • 2 tablespoons cornstarch
  • 1/4 teaspoon salt
  • 1/4 cup freshly squeezed lemon juice
  • 2 large eggs
  • 2 tablespoons unsalted butter softened
  • 1/2 teaspoon lemon zest or dried lemon peel seasoning

Instructions
 

  • Preheat the oven to 350°F (175°C). Line an 8x8 inch baking pan with parchment paper.
  • Make the Blondie Crust: Cream together the softened butter and sugars until light and fluffy. Beat in the egg and vanilla extract.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in the white chocolate chips.
  • Press the blondie batter evenly into the prepared pan. Bake for 15-20 minutes, or until a toothpick inserted into the center comes out clean.
  • While the blondie crust cools, make the Lemon Filling: In a medium saucepan (off the heat), whisk together the sugar, cornstarch, and salt. Gradually whisk in the lemon juice and eggs until smooth.
  • Once smooth, cook over medium heat, stirring constantly, until the mixture thickens and bubbles. Reduce heat to low and simmer for 1 minute. Remove from heat and stir in the butter and lemon zest until melted and combined.
  • Pour the hot lemon filling over the cooled blondie crust. Refrigerate for at least 2 hours, or until the filling is set.
  • Cut into squares and enjoy!

Notes

Tips and Tricks:
  • If your lemon mixture gets clumpy, strain it straight onto the blondies prior to spreading.
  • For a more intense lemon flavor, add a little extra lemon zest or lemon extract to the lemon layer on top.
