Equipment

  • 1 Skillet Pan

Ingredients
  

  • 3 large eggs
  • 1/4 cup milk
  • 1/4 tsp salt
  • Pinch of black pepper optional
  • 1 tbsp butter
  • 6 mini tortillas white or wheat flour, your preference
  • 1/2 cup cheddar cheese shredded
  • 1/2 cup apples diced into cubes or matchsticks

Instructions
 

Instructions for the Eggs:

  • In a medium bowl, whisk together the eggs, milk, salt, and pepper.
  • Heat the butter in a large skillet over medium heat.
  • Pour the egg mixture into the skillet and stir constantly for the first 1-2 minutes. Then lower the heat to medium low and let the eggs set up like a frittata (no more stirring) until the eggs are set, about 2-3 minutes. Turn off the heat.
  • Slide or turn out onto a cutting board and allow to cool.

Instructions for Assembly:

  • Cut eggs into 4” long pieces (½” to 1” wide).
  • Spread a layer (thickness depends on liking) of the shredded cheese on each tortilla.
  • Top with the eggs and diced apples. Roll up the tortillas tightly
  • Place in 1 layer in the air fryer and crisp at 400 degrees for about 2 minutes (depending on your air fryer you may need more or less time).
  • For extra crispy, let the roll ups sit in the air fryer after the timer goes off.
  • Mix the honey, yogurt, and cinnamon (optional) for a dipping sauce.
  • Cut the roll ups in half, serve immediately with the dipping sauce and enjoy!

Notes

Tips:
  • For a sweeter roll-up, add a drizzle of honey or maple syrup to the top before serving. (instead of the dipping sauce)
  • If your kiddo is particular about sauces, service with a side of ketchup, sour cream or any other sauce favorite.
  • For a more flavorful roll-up, add a pinch of garlic powder or onion powder to the scrambled eggs. Additionally, add your favorite breakfast sausage to the roll up.
  • You can also add other vegetables to the egg scramble directly or to the roll-ups, such as peppers, zucchini and onions.
  • If you are making the roll-ups ahead of time, you can store them in the refrigerator for up to 24 hours. To reheat, follow the air fryer instructions above.
  • If you are meal prepping and want to store in the freezer, place in freezer safe storage bags or containers prior to air frying and heat up in the air fryer directly once you are ready.
