Ever eaten banana or zucchini bread, or even coffee cake and thought…meh. Well, here’s a creative way to elevate the Brekki Beet Spread into a bread!
Running late and need breakfast or a snack? This Beet Swirl bread is a satisfying way to have breakfast while on the go. It’s also a great addition to your little one’s lunch box if they are saying ‘no!’ to sandwiches, like my toddler.
Aside from it being easily transportable as is, there are many ways to “fancify” this yummy bread. Whether you dress it up at breakfast with an egg, or eat it as a snack with hot honey and yogurt, or even at dessert with a scoop of ice cream, this indulgent and flavorful bread will upgrade any meal.
Beet Swirl Bread
Wanting something warm, festive and comforting? Take the Breakfast Beet Spread, swirl it with your favorite muffin mix and voila! You have an easily portable snack, breakfast or lunch for the family!

Ingredients
Bread Batter:
- 1 package muffin mix and all ingredients required on the box (I prefer the TJ's blueberry muffin mix and leave out the blueberries)
- 2 teaspoons vanilla
Brekki Beet Spread:
- 1 large or 3 small beets cooked (cooled), peeled and roughly chopped (I like this brand that’s ready to go)
- 1 Dragon Fruit peeled and roughly chopped or grab a pre-packed Dragonfruit Smoothie kit Sub 1 cup strawberries/berries if dragon fruit is not available
- 1 ripe banana 2 if you are not doing the smoothie kit above
- 1 cup cream cheese softened
- 1/3 cup cottage cheese
- 2-3 tablespoons honey to taste
Instructions
To Make the Brekki Beet Spread:
- Grab that food processor!
- Add everything all at once and blend until smooth. Yup, that’s it!
- Set aside until the assembly stage.
To Make the Bread Batter:
- In a large bowl, whisk the muffin mix, all ingredients required and vanilla.
- The dough should be thick but a little loose, but if not, add milk and stir a little bit at a time until you get that texture.
To Assemble:
- Preheat the oven to 350°F and grease the pan. I also like to line my pan with parchment paper as a double precaution.
- Add half of the muffin bread batter to the pan.
- In spoonfuls, dollop the Brekki Dragon Beet Spread evenly over the top and use a knife to create even swirls.
- Add the remaining muffin bread batter on top, and repeat with the Brekki Dragon Beet Spread.
- Bake for ~45 minutes or until a toothpick inserted comes out clean.
- Let cool for ~15 minutes, then serve and enjoy.
