Protein Boosted Brownie & Fruit Skewers with a Sweet Yogurt Dipping Sauce
Equipment
- 13x9 baking pan
- 25 4" skewers
Ingredients
For the Brownies:
- 1 Box of your favorite brownie mix I used Duncan Hines Chewy Fudge
- 2 Eggs
- 1/4 cup Milk or Plant Based Milk
- 2/3 cup Yogurt or Cottage Cheese pureed
- 5 Scoops of your favorite protein powder
- 1/2 cup dark or milk chocolate chips I used Lily’s dark chocolate chips
- 1/4 cup Cocoa Powder
- 3 tablespoons Neutral Oil avocado, vegetable or canola oil
- 1 teaspoon vanilla
For the Skewers:
- 1 cup strawberries halved
- 3 large Bananas sliced ½” thick
- 25 4-5 ” wooden skewers soaked in warm water for 20 minutes
For the Sweet Dipping Sauce (optional):
- 3 tablespoons yogurt
- 2 tablespoons whipped cream ie: reddi whip or cool/tru whip
- 1 tablespoon fresh mint minced (optional)
Instructions
- Preheat the oven to 325°F (150°C) and grease a 13x9 inch baking pan or line with parchment paper.
- In a large bowl, whisk together all ingredients, mixing until just combined. Do not overmix!
- Pour batter into the prepared pan and spread evenly. Sprinkle it with chocolate chips.
- Bake for 15-20 minutes, or until a toothpick inserted into the center comes out with moist crumbs. Do not overbake, as the brownies will continue to set as they cool.
- Let cool completely in the pan before cutting into 80 mini squares.
- While cooling, chop your fruit and mix the yogurt and whipped cream or cool/tru whip in a small bowl. Sprinkle the sauce with mint (optional) and set aside.
- Skewer the fruits and brownies alternating the brownie and fruit on each skewer. Dip and enjoy!
Notes
- Freeze the brownies for up to 3 months and defrost when you are ready to skewer and enjoy!
- If the brownie batter is too thick, add more milk a couple of tablespoons at a time.
