Air Fryer Brussel Sprout 'Tater Tots'
Equipment
- 1/2 tablespoon measure or small spoon
- Veggie peeler
- Air Fryer
- Food Processor (optional for shredding the brussel sprouts)
Ingredients
- 1 large sweet potato peeled and shredded (approximately 2 cups)
- 2 cups Brussels sprouts trimmed and shredded
- 1-2 tbsp all-purpose flour depending on the amount of extra liquid in your veggies
- 1/3 cup grated Parmesan cheese
- 1 egg
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried parsley optional
Instructions
- Preheat at 375F for approximately 5 minutes.
- In a large bowl, combine grated sweet potato, shredded Brussels sprouts, Parmesan cheese, egg, salt, and pepper.
- Mix well until all ingredients are evenly distributed.
- Using a ½ tablespoon measure or small spoon, evenly measure the mixture into your hand. Roll the mixture in your hand until a little ball forms and then pinch sides and flatten slightly to form a log shape in your hands (like a tot!). If needed, squeeze the ball of mixture in your hand to get out any excess liquid.
- Spray the air fryer tray lightly with nonstick spray and place tots in a single layer. Fry at 375F for approximately 5-7 minutes or until golden brown and crispy.
Notes
- For a richer flavor, use roasted Brussels sprouts instead of raw.
- If you don't have Parmesan cheese, you can substitute another type of hard cheese, such as cheddar or Gruyère.
- Serve these tots with your favorite dipping sauce, such as ketchup, mayonnaise, or ranch dressing.
- This recipe can be made in advance and stored in the refrigerator for up to 2 days. Reheat tots in a 400 degrees F (200 degrees C) oven for 10-15 minutes, or until warmed through.
- This recipe can also be made into a frittata. Simply pour the mixture into a greased baking dish and bake for 25-30 minutes, or until set.
