Here’s a fun and easy recipe for a kid-friendly twist on the classic quesadilla. That's right, we're talking about The Pear-fect Quesadilla! Equipment

  • Large saute pan or skillet
  • Nonstick spray or butter
  • Cheese grater
  • Food Processor

Ingredients
  

  • 1 Tablespoon Honey
  • ¼ cup Sour Cream
  • 2 medium ripe pears cubed or diced
  • 1/2 cup shredded Monterey Jack cheese
  • 1/4 cup pureed pistachios or any nut you have on hand
  • 2 flour tortillas any brand will do, but if you have smaller ones, then double the quantity

Instructions
 

  • Mix together the sour cream and honey and set aside.
  • Puree the pistachios in the food processor. If you want a smoother texture, add some pear or honey to add a little bit of liquid.
  • Heat a large skillet over medium heat.
  • Place one tortilla in the skillet and allow a couple of minutes to heat up.
  • Using a spatula or tongs to flip the tortilla and spread the pistachio mixture over it.
  • Layer the pears and the cheese, and place the 2nd tortilla over it. Cook for 2-3 minutes until the cheese is melted and the tortilla is golden brown on the underside.
  • Using a large spatula, flip it over and turn off the heat. Allow to sit in the pan for 2-3 minutes or until brown on the other side.
  • Cut the quesadilla into wedges and serve warm.

Notes

Notes & Tips: 
  • For a sweeter quesadilla, add honey or pureed pear to the pistachio mixture.
  • For a spicier quesadilla, add a pinch of red pepper flakes or spicy taco seasoning.
