Air Fryer Lemon Herb Salmon

This lemon-herb salmon is the perfect weeknight meal - easy, healthy, and packed with flavor! Whether you're a seasoned chef or just learning your way around the kitchen, this recipe is simple enough to whip up in a flash. Ingredients
  

  • 2 salmon filets around 4 oz each
  • 2 tablespoons olive oil
  • 1 tablespoon lemon juice
  • 1 teaspoon dried oregano
  • ½ teaspoon za’atar optional
  • 1/2 teaspoon dried thyme
  • 1/4 teaspoon smoked paprika
  • Salt and freshly ground black pepper to taste
  • 1 pint cherry tomatoes halved
  • 1/4 cup Kalamata olives pitted and halved (optional)
  • 1/4 cup chopped fresh parsley optional

Instructions
 

  • Preheat the air fryer at 400°F (200°C) for 5 minutes.
  • In a small bowl or pyrex measuring cup, whisk together olive oil, lemon juice, oregano, thyme, paprika, salt, and pepper.
  • Place the salmon in a plastic bag and pour the marinade into the bag. Zip or seal the bag closed and massage the salmon with the marinade. Set aside for at least 30 minutes.
  • Line the bottom of the air fryer basket with foil and grease with non-stick spray. Scatter the cherry tomatoes around the bottom of the tray and arrange the salmon filets over the tomatoes.
  • Air fry for 10-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
  • Garnish with fresh parsley (optional) and serve immediately.
