- 2 salmon filets around 4 oz each
- 2 tablespoons olive oil
- 1 tablespoon lemon juice
- 1 teaspoon dried oregano
- ½ teaspoon za’atar optional
- 1/2 teaspoon dried thyme
- 1/4 teaspoon smoked paprika
- Salt and freshly ground black pepper to taste
- 1 pint cherry tomatoes halved
- 1/4 cup Kalamata olives pitted and halved (optional)
- 1/4 cup chopped fresh parsley optional
Preheat the air fryer at 400°F (200°C) for 5 minutes.
In a small bowl or pyrex measuring cup, whisk together olive oil, lemon juice, oregano, thyme, paprika, salt, and pepper.
Place the salmon in a plastic bag and pour the marinade into the bag. Zip or seal the bag closed and massage the salmon with the marinade. Set aside for at least 30 minutes.
Line the bottom of the air fryer basket with foil and grease with non-stick spray. Scatter the cherry tomatoes around the bottom of the tray and arrange the salmon filets over the tomatoes.
Air fry for 10-15 minutes, or until the salmon is cooked through and flakes easily with a fork.
Garnish with fresh parsley (optional) and serve immediately.
