MINI HORCHATA POPOVERS

As a little girl, I have fond memories of visiting my grandparents in Miami and watching my grandma make me a “milkshake” as I liked to call it (ie: horchata). Cinnamon is a warm and sweet spice that has a slightly woody aroma. It is a key ingredient in horchata, and it plays an important role in the drink’s flavor profile.

 

Cinnamon adds a complex sweetness to horchata. It also balances out the nutty flavor of the rice and the richness of the milk. Cinnamon also has a warming effect, which makes it an ideal spice for fall.

While having horchata by itself is amazing and refreshing, what could be a better way to showcase cinnamon spice and have a warm and cozy, kid-friendly, dish this fall season than popovers.  Instead of just adding milk to the batter, why not add a rich and creamy flavor profile to showcase the cinnamon and bake dreamy little puffs for your little ones.

Horchata Popovers are a delicious and unique twist on the classic popover. They are made with a horchata-flavored batter, which gives them a sweet and nutty flavor. Horchata Popovers are perfect for breakfast, brunch, or dessert.

Mini Horchata Popovers

Equipment

  • 1 Popover pan or mini muffin pan
  • Horchata Powder (I bought mine on Amazon)

Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 cup sugar
  • 2 eggs
  • 1 cup prepared horchata I used a mix I bought on Amazon
  • 2 tablespoons melted butter
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla

Instructions
 

  • Preheat the oven to 425 degrees F (225 degrees C). Grease and flour a popover pan or mini muffin pan and place in the oven while preparing the batter.
  • In a medium bowl, whisk together the flour, salt, baking powder, baking soda, and sugar.
  • In a separate bowl, whisk together the egg, horchata, vanilla and melted butter.
  • Add the wet ingredients to the dry ingredients and whisk until just combined.
  • Pour the batter into the prepared pan and bake for 10 minutes, then reduce the heat down to 350 for 10 minutes or until the popovers are golden brown and puffed up.
  • Serve immediately and enjoy!

Notes

Tips:
  • For extra flavor, add a teaspoon of cinnamon or vanilla extract to the batter.
  • To make sure that your popovers are light and fluffy, don't over mix the batter.
  • Serve your Horchata Popovers with fresh fruit, whipped cream, or maple syrup.
