Mini Horchata Popovers

While having horchata by itself is amazing and refreshing, what could be a better way to showcase cinnamon spice and have a warm and cozy, kid-friendly, dish this fall season than popovers. Horchata Popovers are a delicious and unique twist on the classic popover!

Equipment

  • 1 Popover pan or mini muffin pan
  • Horchata Powder (I bought mine on Amazon)

Ingredients
  

  • 1 cup all-purpose flour
  • 1/2 teaspoon salt
  • 1/4 teaspoon baking powder
  • 1/4 teaspoon baking soda
  • 1/4 cup sugar
  • 2 eggs
  • 1 cup prepared horchata I used a mix I bought on Amazon
  • 2 tablespoons melted butter
  • 1 teaspoon cinnamon
  • 1 teaspoon vanilla

Instructions
 

  • Preheat the oven to 425 degrees F (225 degrees C). Grease and flour a popover pan or mini muffin pan and place in the oven while preparing the batter.
  • In a medium bowl, whisk together the flour, salt, baking powder, baking soda, and sugar.
  • In a separate bowl, whisk together the egg, horchata, vanilla and melted butter.
  • Add the wet ingredients to the dry ingredients and whisk until just combined.
  • Pour the batter into the prepared pan and bake for 10 minutes, then reduce the heat down to 350 for 10 minutes or until the popovers are golden brown and puffed up.
  • Serve immediately and enjoy!

Notes

Tips:
  • For extra flavor, add a teaspoon of cinnamon or vanilla extract to the batter.
  • To make sure that your popovers are light and fluffy, don't over mix the batter.
  • Serve your Horchata Popovers with fresh fruit, whipped cream, or maple syrup.
