Coming from a Middle Eastern background, it seemed only fitting to give the classic 7 layer dip a twist with flavors that encompass the entire Mediterranean culture. My favorite part about this is its versatility – I eat it as a comforting dip, as a side on rice, or even as a creamy and textural addition to my everyday salad.

The Classic 7-Layer Dip with Mediterranean Flavors
Equipment
- Food Processor
- Air Fryer
- Strainer
Ingredients
For the Labneh:
- 1/2 cup labneh strained yogurt or Greek yogurt
- 1 tablespoon fresh lemon juice
- 1 clove garlic minced or teaspoon of dried garlic
- 1/4 teaspoon dried oregano
- Lemon peel or zest
- cardamom
- Salt
- Sumac
- za’atar
- Salt and pepper to taste
- 1/2 cup Kalamata olives pitted and roughly chopped (optional)
- 1/4 cup red onion finely diced
- 1/4 cup cucumber diced
Air Fried chickpeas:
- 1 15 oz. can of chickpeas
- Za’atar to taste
- Sumac to taste
- 1-2 tbsp Olive oil
Mint Chimichurri:
- 1/2 cup fresh mint leaves
- 2 tbsp olive oil
- Lemon juice and zest
Additional Layers:
- 1/4 cup pistachios or pine nuts
- 1/4 cup crumbled feta cheese or halloumi
- Roasted eggplant dip I used the Trader Joe’s brand
- Your preferred store bought hummus
Instructions
For the Chickpeas:
- Preheat the air fryer at 375 degrees fahrenheit for 3-5 minutes.
- While the air fryer is preheating, toss the chickpeas in olive oil and za’ater and sumac until lightly coated.
- Air fry at 375 degrees fahrenheit for 5-7 minutes.
For the Mint Chimichurri:
- In the food processor, blend the mint, lemon juice and zest.
- Drizzle in the olive oil until blended smooth.
Assemble the Layers:
- Layer 1: Spread the hummus evenly in a shallow serving dish.
- Layer 2: Spread the eggplant dip evenly over the hummus.
- Layer 3: In a small bowl, mix labneh (or yogurt), mix-ins and spices. Spread over the hummus.
- Layer 4: Sprinkle a single layer of nuts of your choice.
- Layer 5: Sprinkle with crispy chickpeas.
- Layer 6: Sprinkle a creamy and tangy crumble of feta cheese.
- Layer 7: Finish with a drizzle of mint chimichurri.
- Serve with pita bread, pita chips, or crudités for dipping.
