Equipment

Ingredients
  

For the Labneh:

  • 1/2 cup labneh strained yogurt or Greek yogurt
  • 1 tablespoon fresh lemon juice
  • 1 clove garlic minced or teaspoon of dried garlic
  • 1/4 teaspoon dried oregano
  • Lemon peel or zest
  • cardamom
  • Salt
  • Sumac
  • za’atar
  • Salt and pepper to taste
  • 1/2 cup Kalamata olives pitted and roughly chopped (optional)
  • 1/4 cup red onion finely diced
  • 1/4 cup cucumber diced

Air Fried chickpeas:

  • 1 15 oz. can of chickpeas
  • Za’atar to taste
  • Sumac to taste
  • 1-2 tbsp Olive oil

Mint Chimichurri:

  • 1/2 cup fresh mint leaves
  • 2 tbsp olive oil
  • Lemon juice and zest

Additional Layers:

  • 1/4 cup pistachios or pine nuts
  • 1/4 cup crumbled feta cheese or halloumi
  • Roasted eggplant dip I used the Trader Joe’s brand
  • Your preferred store bought hummus

Instructions
 

For the Chickpeas:

  • Preheat the air fryer at 375 degrees fahrenheit for 3-5 minutes.
  • While the air fryer is preheating, toss the chickpeas in olive oil and za’ater and sumac until lightly coated.
  • Air fry at 375 degrees fahrenheit for 5-7 minutes.

For the Mint Chimichurri:

  • In the food processor, blend the mint, lemon juice and zest.
  • Drizzle in the olive oil until blended smooth.

Assemble the Layers:

  • Layer 1: Spread the hummus evenly in a shallow serving dish.
  • Layer 2: Spread the eggplant dip evenly over the hummus.
  • Layer 3: In a small bowl, mix labneh (or yogurt), mix-ins and spices. Spread over the hummus.
  • Layer 4: Sprinkle a single layer of nuts of your choice.
  • Layer 5: Sprinkle with crispy chickpeas.
  • Layer 6: Sprinkle a creamy and tangy crumble of feta cheese.
  • Layer 7: Finish with a drizzle of mint chimichurri.
  • Serve with pita bread, pita chips, or crudités for dipping.
