High-Protein Black Bean Soup
Equipment
- Dutch oven
Ingredients
Core Ingredients:
- 1 tablespoon olive oil
- 1/2 onion chopped
- 1 bell pepper any color, chopped
- 2 cloves garlic minced
- 1 teaspoon ground cumin
- 1/2 teaspoon chili powder or chili flakes
- 1/4 teaspoon smoked paprika
- 1 15-ounce can black beans, rinsed and drained
- 3 cups vegetable broth
- 1/2 cup yogurt your favorite brand
- Salt and freshly ground black pepper to taste
Optional Ingredients:
- 2 tablespoons chopped fresh cilantro
- 1/2 lime juiced
- 2 tablespoons sour cream
- 2 tablespoons chopped avocado
- Crispy tortilla strips
Instructions
Sauté the veggies:
- Heat olive oil in a large pot or Dutch oven over medium heat. Add the onion and bell pepper, and cook until softened, about 5 minutes. Stir in the garlic and cook for another minute until fragrant.
Spice it up:
- Add the cumin, chili powder, and smoked paprika, and cook for another minute, stirring constantly to release the flavors.
Layer the flavor:
- Add the black beans and vegetable broth. Bring to a simmer and cook for 15 minutes, allowing the flavors to meld. Mix in the yogurt and lime juice, if using. Add salt and pepper to taste.
Serve up the fiesta:
- Ladle into bowls and garnish with chopped cilantro, a dollop of sour cream, avocado chunks and crispy tortilla strips.
