High-Protein Black Bean Soup

Ingredients
  

Core Ingredients:

  • 1 tablespoon olive oil
  • 1/2 onion chopped
  • 1 bell pepper any color, chopped
  • 2 cloves garlic minced
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder or chili flakes
  • 1/4 teaspoon smoked paprika
  • 1 15-ounce can black beans, rinsed and drained
  • 3 cups vegetable broth
  • 1/2 cup yogurt your favorite brand
  • Salt and freshly ground black pepper to taste

Optional Ingredients:

  • 2 tablespoons chopped fresh cilantro
  • 1/2 lime juiced
  • 2 tablespoons sour cream
  • 2 tablespoons chopped avocado
  • Crispy tortilla strips

Instructions
 

Sauté the veggies:

  • Heat olive oil in a large pot or Dutch oven over medium heat. Add the onion and bell pepper, and cook until softened, about 5 minutes. Stir in the garlic and cook for another minute until fragrant.

Spice it up:

  • Add the cumin, chili powder, and smoked paprika, and cook for another minute, stirring constantly to release the flavors.

Layer the flavor:

  • Add the black beans and vegetable broth. Bring to a simmer and cook for 15 minutes, allowing the flavors to meld. Mix in the yogurt and lime juice, if using. Add salt and pepper to taste.

Serve up the fiesta:

  • Ladle into bowls and garnish with chopped cilantro, a dollop of sour cream, avocado chunks and crispy tortilla strips.
