  • 1 scoop pumpkin chocolate or vanilla protein powder
  • 1/4 teaspoon salt
  • 1 cup cold unsalted butter cut into cubes or coconut oil

For the filling:

  • 1 15-ounce can pumpkin puree
  • 1 cup granulated sugar
  • 1-2 teaspoons pumpkin pie spice
  • 1/4 teaspoon salt
  • 2 large eggs
  • 1 12-ounce can evaporated milk or 1 cup almond milk
  • ½ cup chocolate chips optional

Instructions
 

  • Prepare the crust: In a large bowl, whisk together the flour, powdered sugar, and salt. Using a pastry cutter or two knives, cut in the cold butter until the mixture resembles coarse crumbs. Press the crumbly mixture evenly into the bottom of a 9x13-inch baking dish. Bake at 350°F (175°C) for 15-20 minutes, or until the crust is lightly golden brown.
