Notes

Tips:
Assembly: If you want even sizes, use a mini ice cream scooper and smash with a wet bottom measuring cup. Wetting hands before rolling or handling the mixture helps when forming your favorite shape.
Storage: Store in the fridge or the freezer for easy meal prep and reheat in the air fryer or oven to get them crispy again.
Variation: For a sweeter snack, add a few tablespoons of maple syrup or honey to the pumpkin quinoa mixture. Or make them even cheesier with mozzarella.
Get creative: Try adding different toppings to your pumpkin quinoa crisps, such as grated Parmesan cheese, crumbled feta cheese, chopped nuts, or dried seeds.
