- 1 cup cooked quinoa
- 1 cup canned pumpkin puree
- 1/2 cup grated parmesan cheese
- 1/2 cup panko
- 1/4 tsp garlic powder
- 1/4 tsp onion powder
- Salt and pepper to taste
- Non-stick cooking spray
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper and set aside.
In a large mixing bowl, combine the cooked quinoa, pumpkin puree, parmesan cheese, breadcrumbs, garlic powder, onion powder, salt, and pepper. Mix well.
Using your hands, shape the mixture into small, bite-sized patties or balls. Place them onto the lined baking sheet.
Lightly spray the tops of the patties with non-stick cooking spray. This will help them brown and become crispy.
Bake in the preheated oven for 25-30 minutes (flip after 15 minutes) or until they are golden brown and crispy on the outside.
Serve with your favorite dipping sauce and enjoy!
Tips:
Assembly: If you want even sizes, use a mini ice cream scooper and smash with a wet bottom measuring cup. Wetting hands before rolling or handling the mixture helps when forming your favorite shape.
Storage: Store in the fridge or the freezer for easy meal prep and reheat in the air fryer or oven to get them crispy again.
Variation: For a sweeter snack, add a few tablespoons of maple syrup or honey to the pumpkin quinoa mixture. Or make them even cheesier with mozzarella.
Get creative: Try adding different toppings to your pumpkin quinoa crisps, such as grated Parmesan cheese, crumbled feta cheese, chopped nuts, or dried seeds.
