Turkey Mango Spinach Meatballs (Air Fryer Friendly)

- Air Fryer
- Mini Ice Cream or Cookie Scooper
Ingredients
- 12 oz. ground turkey see notes below
- 1 egg
- 1/2 cup mango + any excess juice see notes below
- 1/4 cup frozen spinach
- 2 tbsp diced yellow or white onion
- 1/2 cup oat flour see notes
- 1/2 cup panko bread crumbs
- 1 teaspoon salt
- 1 teaspoon poultry seasoning
- 1 teaspoon dried parsley
Instructions
- Preheat the air fryer at 375 degrees F (190 degrees C) for about 5 minutes.
- Place turkey, egg, oat flour, and panko in a medium mixing bowl and set aside.
- In the food processor, blend the mango, spinach, onion, yogurt and seasoning until smooth.
- Add the food processor mixture to the bowl and mix together until just combined.
- Using the mini scooper or small spoon, scoop and place in the air fryer, being careful not to overcrowd.
- Air fry for 8-10 minutes at 375 degrees F (190 degrees C), or until golden brown, crispy and cooked in the middle. Cool slightly before serving and enjoy!
Notes
- Vegetarian Option: Substitute the turkey for a block of soft tofu and throw it in the food processor with the remaining ingredients.
- When fresh mango is hard to find, I recommend frozen and use frozen mango in this recipe regularly.
- If you don’t want to buy oat flour, grinding up quick oats or dry oatmeal works great as well.
- Storage and reheating instructions: These meatballs can be stored in the refrigerator for up to 1 week. To reheat, simply air fry for 1-2 minutes at 350 degrees.
- For make ahead or meal prep, reduce the frying time slightly and freeze in an airtight container. Once you are ready to eat, reheat in the air fryer for about 3-5 minutes at 375F.
- If you do not have an air fryer, heat and bake at the same temp in the oven on a parchment lined baking sheet.
