Turkey Mango Spinach Meatballs (Air Fryer Friendly)

Ingredients
  

  • 12 oz. ground turkey see notes below
  • 1 egg
  • 1/2 cup mango + any excess juice see notes below
  • 1/4 cup frozen spinach
  • 2 tbsp diced yellow or white onion
  • 1/2 cup oat flour see notes
  • 1/2 cup panko bread crumbs
  • 1 teaspoon salt
  • 1 teaspoon poultry seasoning
  • 1 teaspoon dried parsley

Instructions
 

  • Preheat the air fryer at 375 degrees F (190 degrees C) for about 5 minutes.
  • Place turkey, egg, oat flour, and panko in a medium mixing bowl and set aside.
  • In the food processor, blend the mango, spinach, onion, yogurt and seasoning until smooth.
  • Add the food processor mixture to the bowl and mix together until just combined.
  • Using the mini scooper or small spoon, scoop and place in the air fryer, being careful not to overcrowd.
  • Air fry for 8-10 minutes at 375 degrees F (190 degrees C), or until golden brown, crispy and cooked in the middle. Cool slightly before serving and enjoy!
