  • 1/3 cup panko
  • 1/3 cup breadcrumbs
  • 1 tablespoon dried basil

  • Salt and pepper to taste
  • 1/2 cup flour
  • 2 eggs lightly beaten
  • 1/4 cup pistachios
  • 1/4 cup mint leaves
  • Balsamic glaze to taste

Instructions
 

For the Goat Cheese:

  • Preheat the air fryer at 375°F for 5 minutes.
  • Cut slices of goat cheese off the log and then cut again into thirds. Roll each piece into a small ball.
  • In a small bowl, combine the panko, breadcrumbs and seasoning.
  • In another small bowl, beat the eggs lightly.
  • In a third bowl, measure out the flour.
  • Dredge the balls of goat cheese in the flour, egg and panko and breadcrumb mixture, in that order.
  • Once all goat cheese balls are coated, lightly grease the air fryer pan and place the goat cheese in a single layer.
  • Air fry for approximately 5-7 minutes at 375°F or until golden brown. Set aside while assembling the salad.

For Assembly:

  • In either a large bowl or plate, layer the watermelon with the air fried goat cheese on top.
  • Sprinkle with the pistachios and drizzle the balsamic glaze on top.
  • Finally, sprinkle the mint leaves, serve and enjoy!
