- 1 cups watermelon cubed
- 4 oz. goat cheese log
- 1/3 cup panko
- 1/3 cup breadcrumbs
- 1 tablespoon dried basil
- 1 tablespoon dried parsley
- Salt and pepper to taste
- 1/2 cup flour
- 2 eggs lightly beaten
- 1/4 cup pistachios
- 1/4 cup mint leaves
- Balsamic glaze to taste
For the Goat Cheese:
Preheat the air fryer at 375°F for 5 minutes.
Cut slices of goat cheese off the log and then cut again into thirds. Roll each piece into a small ball.
In a small bowl, combine the panko, breadcrumbs and seasoning.
In another small bowl, beat the eggs lightly.
In a third bowl, measure out the flour.
Dredge the balls of goat cheese in the flour, egg and panko and breadcrumb mixture, in that order.
Once all goat cheese balls are coated, lightly grease the air fryer pan and place the goat cheese in a single layer.
Air fry for approximately 5-7 minutes at 375°F or until golden brown. Set aside while assembling the salad.
For Assembly:
In either a large bowl or plate, layer the watermelon with the air fried goat cheese on top.
Sprinkle with the pistachios and drizzle the balsamic glaze on top.
Finally, sprinkle the mint leaves, serve and enjoy!
