Ingredients
  

For the Breadcrumbs:

  • 2-3 slices of whole wheat bread

For the Meatballs:

  • 1 lb ground turkey or a mix of turkey and chicken
  • 1/2 cup whole wheat bread crumbs see extra step below
  • 1/4 cup grated Parmesan cheese
  • 1/4 cup chopped fresh parsley
  • 1 teaspoon dried oregano
  • 1/2 teaspoon garlic powder
  • 1/4 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 egg beaten

Instructions
 

For the Breadcrumbs:

  • Blend 2-3 slices of whole wheat bread in the food processor until crumb texture forms. Set aside.

For the Meatballs:

  • If using the Oven: Preheat the oven to 400°F (200°C). Line a large baking sheet with parchment paper.
  • If using the Air Fryer: Preheat the fryer to 400°F (200°C) for 5 minutes.
  • In a large bowl, combine ground turkey (or chicken), bread crumbs, Parmesan cheese, herbs, spices, salt, pepper, and egg. Mix well until just combined.
  • Scoop the mixture into 1-inch meatballs using a spoon or your mini ice cream scooper.
  • If using the Oven: Place them on the prepared baking sheet. Bake for 20-25 minutes, or until the meatballs are cooked through and golden brown.
  • If using the Fryer: Spray the tray with non-stick spray and place on the fryer tray. Bake for 8-10 minutes, or until the meatballs are cooked through and golden brown.
  • Serve immediately and enjoy!
