'Anytime' Tiramisu

Meet my coffee-free ‘Anytime Tiramisu’! It’s creamy with yogurt and cottage cheese which gives it a good protein ‘pick me up’, crunchy with lower calorie ginger snaps, sweet with the perfectly ripe banana and well spiced with cinnamon and ginger.

Equipment

  • 1 8 oz drinking glass or dessert glass
  • 1 Food Processor

Ingredients
  

  • 5 Gingerbread snaps
  • 2/3 cup your favorite yogurt (I like Oikos triple zero vanilla)
  • 1/4 cup cottage cheese
  • 1 tbsp honey or any substitute you like
  • 1 banana sliced (or your favorite fruit)
  • 1/2 tsp cinnamon + a pinch for the topping
  • The juice reserved from the kid-friendly recipe or any juice you have in the fridge apple, orange, etc.
  • 1 tsp cocoa powder optional
  • 2 tablespoons low sugar chocolate chips optional

Instructions
 

  • In the food processor, blend the cottage cheese, yogurt and honey until fluffy and smooth.
  • In a small shallow bowl or plate, dip 3-4 gingerbread snaps in the juice or mixture you set aside and place at the bottom of your dessert glass.
  • Layer the yogurt mixture and the banana on top.
  • Continue to layer this way until you get to the top.
  • Dust with cocoa powder, cinnamon and chocolate chips and enjoy.

Notes

*If looking for more of a snack or even lower calorie dessert, cut the recipe in half.
