Ingredients
  

For the BBQ Sauce:

  • 1 cup ketchup
  • 1/4 cup apple cider vinegar
  • 1/4 cup brown sugar
  • 2 tablespoons honey
  • 1 tablespoon Worcestershire sauce
  • 1/2 tablespoon Dijon mustard
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • 1 ounce semi-sweet or dark chocolate finely chopped (around 1 square of a chocolate bar)

For the Chicken and Rice:

  • 4 boneless skinless chicken breasts or 1 lb. chicken tender breasts
  • 3 cups sushi rice cooked according to the package

Instructions
 

For the BBQ Sauce:

  • Follow the same steps as the basic BBQ sauce recipe until you reach the point of simmering the sauce.
  • Once the sauce is simmering, add the finely chopped dark chocolate to the saucepan.
  • Stir well to incorporate the chocolate into the sauce.
  • Continue to simmer the sauce for an additional 5-10 minutes, stirring occasionally, until the chocolate has melted completely and the sauce has thickened slightly.
  • Taste the BBQ sauce and adjust the seasoning with salt and pepper as needed.
  • Once the chocolate BBQ sauce reaches your desired consistency and flavor, remove it from the heat and let it cool slightly before using.
  • Use the chocolate BBQ sauce immediately or store it in an airtight container in the refrigerator for up to a week.

For the Chicken:

  • Pour half of the BBQ sauce over the chicken breasts and marinate for 30 minutes.
  • Preheat your grill to medium-high heat.
  • Place the marinated chicken breasts on the preheated grill and cook for about 5-7 minutes per side, or until they are cooked through and no longer pink in the center.
  • During the last few minutes of grilling, brush the BBQ sauce onto the chicken breasts, turning them occasionally to coat evenly.
  • Remove from the grill and let them rest for a few minutes before serving.

For Assembly:

  • Place a mound of rice in the middle of the plate.
  • Add any vegetables you like, and place the chicken on top.
  • Drizzle with additional BBQ sauce and sprinkle with fresh herbs like cilantro or your favorite salsa.
