Boozy Chocolate Bliss Tiramisu

Tiramisu means to ‘pick me up”! For my elegant coffee-free Tiramisu variation, can you guess what the ‘pick me up’ is? Psst…it’s in the title!

Equipment

  • 1 Individual dessert cups or an 8 oz drinking glass
  • 1 Microwave safe bowl or pyrex
  • 1 Standing mixer or hand held mixer

Ingredients
  

  • 16 Gingerbread snaps
  • 2-3 tablespoons of your favorite bourbon + 1 tbsp [optional] if you don’t like or drink alcohol, you can cook out the alcohol or leave out
  • Reserved apple juice from kid’s recipe or 1 tbsp apple or orange juice optional for the bourbon mixture
  • 1/2 cup chocolate chips + 1-2 tbsp for topping
  • 3 tbsp heavy cream + 2/3 cup heavy cream
  • 1/2 tbsp powdered sugar
  • 1/2 tsp vanilla

Instructions for Chocolate Mousse:

  • Melt the chocolate chips with the 3 tbsp heavy cream in a bowl or pyrex. This is easiest done in the microwave in 10-20 second increments and mixing in between until just melted. Set aside and let cool.
  • In your mixer fitted with the whisk attachment, beat the sugar and 1/3 cup heavy cream until stiff peaks form (~1-2 minutes). Add the vanilla and whisk until just combined.
  • [Optional] Add a splash of bourbon if you want your dessert extra boozey.
  • Fold the cooled chocolate mixture and 1/2 the whipped cream until fully combined and set in the fridge to set for at least 2 hours.

Instructions for Assembly:

  • Combine the bourbon and apple mixture in a shallow bowl or a plate with high sides.
  • Dip 2-3 ginger snaps in the bourbon mixture and layer the bottom of your dessert glass.
  • Layer 1-2 heaping spoonfuls of the chocolate mousse and 1-2 heaping spoonfuls whipped cream.
  • Continue layering until you reach the top of your glass. Finish with whipped cream, top with chocolate chips and enjoy!
