Brekki Beet Spread "All Dressed Up"
One of the first rules of parenting is to never forget to feed yourself! To ease up on the morning rush, or to alleviate that 3pm hunger pang, let's "dress up" the Brekki Beet Spread. Don't just satisfy your hunger, satisfy your soul so you can crush your day in a satisfied way!

What You'll Need
- Everything but the bagel seasoning to taste
- Pomegranate seeds to taste
- Whole wheat toasted bread or bagel your choice
- Poached or fried egg warm and runny (optional)
Brekki Beat Spread:
- 1 large or 3 small beets cooked (cooled), peeled and roughly chopped (I like this brand that’s ready to go)
- 1 Dragon Fruit peeled and roughly chopped or grab a pre-packed Dragonfruit Smoothie kit Sub 1 cup strawberries/berries if dragon fruit is not available
- 1 ripe banana 2 if you are not doing the smoothie kit above
- 1 cup cream cheese softened
- 1/3 cup cottage cheese
- 2-3 tablespoons honey to taste
Steps to Make and "Dress-Up" the Beet Spread
Grab that food processor!
Add everything all at once and blend until smooth. Yup, that’s it!
Spread this over your favorite breakfast food like a toasted bagel or muffins, or eat with a spoon.
Sprinkle it with everything but the bagel seasoning and pomegranate seeds. Serve with a warm poached or fried egg (optional).
