For the Shrimp or Tofu:
- 4 oz extra firm tofu or shrimp
- 1/2 cup panko breadcrumbs
- 1/2 cup bread crumbs
- 1/4 cup parmesan cheese
- 3 teaspoons dried basil
- 3 teaspoons dried parsley
- 2 teaspoons garlic powder
- 2 teaspoons dried thyme
- Salt and pepper to taste
- 2 eggs lightly beaten
- 1/2 cup all purpose or whole wheat flour
For the Skewers:
- 24 cherry tomatoes
- 24 mini mozzarella balls
- 24 fresh basil
- 24 fresh mint leaves
For the Tofu or Shrimp:
Preheat the air fryer at 375°F for 5 minutes.
In 3 small bowls, create an assembly line for coating: 1 bowl with flour, 1 bowl with eggs, and 1 bowl with panko, bread crumbs, parmesan and seasoning mixed.
Dip each piece of tofu or shrimp in the flour mix, then the egg, then the breadcrumb coating, and set aside.
Lightly grease the air fryer tray and place the tofu in a single layer on the fryer tray.
Fry the tofu at 375°F for 8-10 minutes or until golden brown.
For Assembly:
Skewer all ingredients in this order: 1 mozzarella ball, 1 mint leaf, 1 cherry tomato, 1 basil leaf, 1 piece of crispy shrimp or tofu, 1 basil leaf, 1 cherry tomato, 1 mint leaf and 1 mozzarella ball.
Repeat for all skewers, serve with your favorite dipping sauce and enjoy!
