For the sandwiches:
- 1 chicken breast shredded or canned (12.5 oz can)
- 1 tablespoon yogurt
- 1 tablespoon mayo
- 2 teaspoons lemon juice
- 2 tablespoons relish
- 1/4 cup pickles minced
- Salt pepper and other seasoning to taste
- 12 mini croissants
For the fruit skewers:
- 12 - 7 ” mini skewers wooden or metal
- 1/4 cup raspberries or halved strawberries
- 1-2 tangerines cuties or 1/4 cup cubed cantaloupe
- 1/4 cup mango or pineapple
- 1/4 cup cubed green apple honeydew or green grapes
- 1/4 cup red or purple grapes
- 1/4 cup blueberries
For the croissants:
Mash together the chicken, yogurt, mayo, lemon juice, and relish. I mash quite a bit to ensure a smoother texture when filling the croissant.
Mix in the chopped pickles and seasoning.
Slice the croissants in half horizontally, but not entirely through, creating a pocket.
Spoon a generous portion of the chicken salad into each croissant pocket.
Add any additional cheese or toppings desired.
For the skewers:
If you have wooden skewers, soak in warm water for 15-20 minutes to avoid splinters in the fruit.
Skewer the fruit that will serve as the base of your skewer - raspberries or strawberries.
One by one, thread the fruits onto the skewer, alternating colors to create a rainbow effect: for example, strawberries (red), tangerines (orange), mango (yellow), green apple (green), grapes (purple), and blueberries (blue and indigo).
Repeat for all 12 skewers and serve alongside the chicken salad croissants. Taste the rainbow!
