Ingredients
  

  • 1 chicken breast shredded or canned (12.5 oz can)
  • 1 tablespoon yogurt
  • 1 tablespoon mayo
  • 2 teaspoons lemon juice
  • 1 small to medium avocado
  • 2 tablespoons relish
  • 1/4 cup pickles minced
  • Salt pepper and other seasoning to taste
  • 6 slices of bread of your choice we used a mix white and whole wheat

Instructions
 

  • In a mixing bowl, combine chicken, yogurt, mayo, avocado, lemon juice, and relish in a bowl.
  • Mash with a fork until a smooth texture forms.
  • Add in the pickles and seasoning to taste.
  • Spread on half of the bread slices and top with the other half of the bread slices.
  • Cut into triangles or whatever shape your family desires and enjoy!

Notes

  • Depending on the size of the chicken breast and the size of the avocado will depend on the volume of chicken mixture. Keep this in mind when assembling the sandwiches and choosing bread, etc.
