Crispy Farro Fritters

Equipment

  • 1 Food Processor
  • 1 Mini Ice Cream/Cookie Scooper
  • 1 Grater
  • 1 Air Fryer

Ingredients
  

For the Fritter Dough:

  • 1 1/2 cup cooked farro cooled to room temp
  • 1 medium zucchinis grated and squeezed to remove excess moisture
  • 1/2 cup grated Parmesan cheese
  • 1 cup all purpose flour or a GF alternative as needed
  • 1 cloves garlic minced
  • 2 large eggs beaten
  • Salt black pepper and seasoning, to taste
  • Oil spray of choice to coat the air fryer tray.

Instructions
 

  • In the food processor, grind the cooked farro, grated and squeezed zucchini, Parmesan cheese, chopped fresh herbs, and garlic.
  • Add the eggs and pulse until a dough-like ball starts to form.
  • Then, gently add the flour and process until combined.
  • Lightly spray the air fryer tray with any oil preferred. Scoop the mixture and shape them into balls. (The dough is slightly sticky so use foil, parchment or liners as needed.)
  • Place them in the fryer and set at 375 for ~8-10 minutes until golden brown and crispy (temperature and time will vary based on the type of air fryer you have).
  • Serve warm with a side of yogurt sauce, a favorite pureed fruit/jam, or what the heck - melted chocolate. Why not?

Notes

Freezing Instructions:
The best way to freeze is before air frying.  Simply place the dough in a freezer-safe container or bag and store in the freezer until needed.
