1/2cupcream cheese or ricottaricotta is currently on recall so I used cream cheese
1/2cupcottage cheese
1/4cupcrumbled feta cheese
1/4cupgrated Parmesan cheese
1/4cupfinely chopped red onion
1/2tablespoonchopped fresh or dried dill
1tablespoonfresh mint
1clovegarlic
1/2teaspoonground nutmeg
Salt and pepper to taste
For the Cigars:
1package phyllo doughthawed according to package instructions
1/4cupmelted butter
Lemon zest and juice
Sesame seeds and chopped fresh herbs for garnishoptional
Instructions
Prepare the Filling: In the food processor, blend spinach, cream cheese, cottage cheese, feta, Parmesan, red onion, dill, mint, garlic, nutmeg, pepper, and salt. Blend until smooth.
Assemble the Cigars: Preheat oven to 375°F (190°C). Lay out a sheet of phyllo dough and brush lightly with melted butter. Repeat with 4 additional sheets, creating a stack of 5 buttered sheets.
With the offset spatula, spread the filling in one thin layer all over the buttered sheet. Cut corner to corner and halve each triangle until you have 16 triangle shapes. Roll up each tightly, creating a cigar shape.
Place cigars on a baking sheet lined with parchment paper. Brush tops with remaining melted butter and sprinkle with sesame seeds, if desired.
Bake for 15-20 minutes, or until golden brown and crispy.
