Healthy Apple Quiche Cups

What happens when you marry the classic quiche recipe with a classic apples and yogurt combo and middle eastern flavors? Healthy Apple Quiche Cups! These Apple Quiche Cups are individually portioned for a healthy, high protein breakfast or even as a filling and nutritious snack on the go.

Equipment

  • Muffin tin
  • Rolling pin (in case you need to roll out your pie dough a bit)
  • Nonstick cooking spray
  • Cookie cutter (3.5” - 4” diameter) or the top of a 16 oz glass
  • Flour to sprinkle under the pie crust

  • 2 large eggs
  • 2 egg whites or 6 tbsp if you are using from the carton
  • 3 tbsp yogurt or cottage cheese
  • 1 tsp salt to taste
  • 1 tsp of black pepper to taste
  • 1/2 tsp marjoram
  • 1/2 tsp sumac
  • 1 store bought pie crust that you can roll out
  • 1/2 cup your favorite apples diced
  • 1/4 cup fennel diced (optional)
  • 1/4 cup yellow onion diced (optional)
  • 1/4 cup zucchini
  • 1-2 of your favorite sausage links diced, optional (vegetarians: you can use vegan sausage or cubed tofu!)

Optional Toppings:

  • 1-2 tbsp yogurtd
  • Sprinkle of sumac
  • Sprinkle of sesame seeds
  • Sprinkle of fresh mint leaves

Instructions
 

Instructions:

  • Preheat the oven to 375 degrees F (190 degrees C) and grease the muffin tin generously.
  • Sprinkle a thin layer of flour onto a working surface and lay out the pie crust. (roll out slightly if needed)
  • Cut the pie crust into 12 circles using the cookie cutter or glass.
  • Place the circles in a mini muffin tin and press down gently so they line the inside and create a little cup (roll out each pie crust circle if you would like larger cups). Gently poke in the bottom of each cup being careful not to poke all the way through (this will prevent the crust from puffing and aid in the baking process).
  • Bake in the oven 3-5 minutes prior to adding the filling.
  • Evenly divide the cheese, apple, fennel, sausage and onion among the muffin cups.
  • In a medium bowl, whisk together the egg, egg white, yogurt/cottage cheese, salt, pepper, marjoram, and sumac.
  • Using a 1/4 measuring cup, pour the egg mixture over the filling in each muffin cup.
  • Bake for 12-15 minutes, or until the quiche is set and the crust is golden brown.
  • Let cool slightly before serving. Add any combination of the optional toppings and enjoy!

Notes

Tips: 
Troubleshooting tips: If the quiche crust is not browning, you can place it under the broiler for a few minutes at the end of the baking time. If the quiche is not setting, you can bake it for a few minutes longer.
Storage and reheating instructions: This quiche can be stored in the refrigerator for up to 3 days. To reheat, simply microwave it on low for 1-2 minutes, or reheat in the air fryer for the same amount of time at 350 degrees.
For make ahead or meal prep, reduce the baking time slightly and freeze in an airtight container. Once you are ready to eat, reheat in the air fryer for about 3 minutes on the reheat setting (350 degrees).
