Ingredients
  

  • 2 cups all-purpose flour
  • 1/4 cup Honey
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • Zest of 2 limes
  • 1/2 cup 1 stick unsalted butter, cold and cut into small cubes
  • 1/2 cup milk
  • 1 large egg
  • 2 tablespoons fresh lime juice
  • Additional sugar for sprinkling optional

Instructions
 

  • Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or lightly grease it.
  • In a large mixing bowl, whisk together the flour, baking powder, salt, and lime zest.
  • Add the cold cubed butter to the dry ingredients. Use a pastry cutter or your fingers to work the butter into the flour mixture until it resembles coarse crumbs.
  • In a separate small bowl, whisk together the milk, honey, egg, and lime juice.
  • Pour the wet ingredients into the dry ingredients and mix until just combined. Be careful not to overmix.
  • Transfer the dough onto a lightly floured surface and gently knead it a few times until it comes together.
  • Once kneaded, wrap in plastic wrap and let rest in the refrigerator for 30 minutes.
  • Divide the dough in half and pat each into a circle about 1 inch thick. Use a sharp knife to cut the circle into 16 wedges.
  • Place the wedges onto the prepared baking sheet, leaving 1" of space between each one.
  • If desired, sprinkle a little sugar over the tops of the scones for added sweetness.
  • Bake in the preheated oven for 15-18 minutes, or until the scones are lightly golden brown on top.
  • Remove from the oven and let cool on the baking sheet for a few minutes before transferring to a wire rack to cool completely.
  • Serve the honey lime scones warm or at room temperature with honey and fresh fruit, clotted cream, lemon curd, or your favorite jam.
